What is the freeze-drying process?

Freeze drying, also known as lyophilization, is a process used to remove moisture from a wide range of products while preserving their structure, flavor, and nutritional content. This method is commonly used for preserving foods, pharmaceuticals, biological samples, and more. The freeze-drying process consists of several stages:

  1. Freezing: The first step involves freezing the product. This is typically done in a special freeze dryer or a separate freezing unit. The low temperature causes the water in the product to turn into ice.

  2. Primary Drying (Sublimation): The frozen product is then placed in a vacuum chamber. In this chamber, a low-pressure environment is created, and heat is applied. The heat causes the ice to transition directly from a solid (ice) to a gas (water vapor) without passing through the liquid phase. This process is called sublimation. The removal of ice by sublimation reduces the moisture content of the product.

  3. Secondary Drying (Desorption): After the primary drying, some bound water molecules may still remain in the product. To remove these, the temperature is raised slightly, and a lower vacuum is applied. This step is known as desorption and ensures that all the moisture is removed from the product.

  4. Final Packaging: Once the freeze-drying process is complete, the product is sealed in airtight packaging to prevent moisture from re-entering and to maintain the product's stability during storage.
